I am doing a Butterball Boneless Turket Breast Roast. It was frozen and I got it at Walmart. Its 3lbs. and I thawed it in the fridge overnight. I took BBQGoddess's advice and injected it with a sauce made of Butter, Frank's Red Hot, onion powder, garlic, cracked pepper, salt,MSG and cayenne pepper. Sampled the suace and it tasted good. Rubbed some of the sauce on the outside and then rubbed a cheapo cajun seasoning (salt based). Smokin it on my ECB. Here's a couple of pics. More to follow if I remember.

Lookin' good! And yes, injecting is the way to go.

How much was it?

I want one bad to dry cure for sammies but always too expensive.

Hey Ron,

It was about $10 if I remember right. I plan to use it as lunch meat. My family loves this "Cajun Turkey" from the deli. Its the only lunchmeat my picky daughter will eat. Of course, it costs $7.99/lb. I figure by the time its cooked, this will end up costing me about $4/lb. and hopefully taste better. Gonna have to return my new slicer, but that's another post.

It is finally done. Smoked it till 170F. Pulled it off and double wrapped it in foil. Put in the cooler for 2 hrs. Dont know if I needed to put it in the cooler, but I figured it couldnt hurt. Putting it in the fridge for tonight. Will slice some up tomorrow. I will post with how it tastes and if the picky daughter likes it.

The turkey breast turned out so delicious. Great flavor with just enough heat. I think the next one I make, I will plan to eat fresh off the smoker. Makes great sandwiches and the picky eater said it was better than grocery store deli. Thanks SMF!

I made Smoked Turkey/ Bacon Club Sandwiches with half the cajun style turkey. Toasted white bread, green lettuce, tomato, bacon, swiss cheese, mayonnaise. Served with some potato chips and it was just like eating at a restaurant. Wife said we definitely have to have these again. That is high praise from her.
