my first try at a fatty (Qview)

So thanks to all the good stuff I have read on these boards I'm trying my first fatty on saturday morning. I don't have any time friday to prepare so I thought I'd give it a shot at rolling it tonight. So I give you... my first fatty go round



started with 1 pound bob evan's sausage, 1 green bell pepper, 1 red bell pepper, some shrooms cut up, and some provolone cheese.

saute'ed the veggies on the stove with water and rolled the sausage flat in a 1 gallon zip lock. Cut the bag apart down the seams and dropping in the fillings (you can see that I am using the guide from this forum)

next I rolled the sausage over the fillings using the plastic bag till it was nice and tight.

next came the bacon weave. Followed the guide here and it came out great.

finally back in more saran wrap to tighten the bacon wrap up and store till saturday morning

I'll put some rub on before it hits the smoker but with a two day rest.. I didn't want to have that much salt sitting on it.

thanks a lot for the encouragement guys. This is only my second week with my modded smoker (i feel I've done a lot in two weeks heh) and I'm going for 3 racks of baby backs, 2 whole chickens, and one fatty on Saturday.

I'm feeling a bit like I am in over my head, but I've got 3 digital probes so how wrong can I go?... right?

I've got 3 different rubs off of this site all mixed up for the 3 racks. I'll tell you which I liked the best.

Wow Dan, having made many a fatties myself I can say that first try or not that is a very nice job. Gotta give you points for the prep alone.
 
Coudos to you on your first fattie roll. Now that was the hard part. Sounds like you have a long row to hoe with all thet meat to smoke on your first smoke. Good luck I'm sure it will come out just fine.
