today i made my first summer sausage, went to cabelas  and bought a packet to do 25 pounds, added colby jack cheese and jalapenos, first i fried a little piece to taste, and it taste way to spicy. but i let it sit in the fridge for about a hour while i was getting things together, and it seemed to change the taste a little, not as spicy. maybe i did not mix well, seemed like i did, because i mixed for 15 minutes. this is a job..... even though i had a 7 lb stuffer it still took me and the misses 2 hours
to stuff, i have 25 extra pounds of old fashion sausage to make tomorrow,
these roles are 1 1/2 inches x 12, put them back in the fridge to bloom, and gonna smoke on sunday..

Looks great Danny, with time the spices will mellow, all said and done they will be awesome!
