My first smoke!

As I mentioned over in my Roll Call, today was my first time ever firing up my smoker (GOSM) and I only planned on seasoning it. Well, the smoke smelled too good to waste, so after a couple hours I tried to toss together a fatty and put it in there.

It sure turned out good... it's official, I'm addicted to smoking now!

I didn't quite get a good seal, hence the apparent cheese mushroom growing on top.

Since this was my first time smoking anything, I didn't want to toss a lot of food in there. I only used 1lb of sausage, some colby & monterey jack cheese, and mushrooms. I coated it in mustard and brown sugar. Next time I plan on putting in some jalapenos and bacon.

Tomorrow I plan on trying some other meats... I have some baby back ribs, cornish hens, salmon fillet, jalapenos, and definitely some more sausage.

Thanks to everyone for the wealth of information I have found around here, it helped throughout the whole process!
 
That looks pretty darn good! I have a GOSM as well, and I like it a lot- welcome to a great hobby, and GREAT food!

Nice first smoke. I hear you on being addicted. The problem with that is a patch won't help you quit. LOL

I don't know what it is but boy it's a good combo. Throw in an adult beverage, not much to beat it.
 
That's a mighty fine fatty for bein your first! But I can assure you, it will not be your last! And we gave up on fatty's anonomous, can't keep anybody on the wagon long enough to get a meetin together!
 
They look good to me. I haven't done a fatty yet. I never heard of them until I joined this forum. I'm doing some soon though. What type of sausage did you use?

I used a roll of Jimmy Dean Regular sausage. One thing I wish I would have known before making it - this stuff sticks to everything! Make sure whatever surface you're making it on is well lubricated, and I suggest keeping the sink running, so you can keep your hands wet.

Once I got it to stop sticking to my hands with water, I thought it was all set... then I tried to take it off the cutting board and the bottom half didn't come with the rest of it.

Someone else mentioned Syran Wrap to roll one, I'm going to have to try that and see how it goes.
 
Yes, saran wrap or even parchment paper/wax paper works great. I put a little olive oil down first and had no problems at all. Oh, by the way that fatty looks great.

yup a litely oild wax paper-and hands-use the paper to roll, peeling back as u go-keep it a little toute-it don't take many to get the hang.hmmm pulling some homeaid breakfast outta the freezer for a wonderful 92* day sunday.
