As I mentioned over in my Roll Call, today was my first time ever firing up my smoker (GOSM) and I only planned on seasoning it. Well, the smoke smelled too good to waste, so after a couple hours I tried to toss together a fatty and put it in there. It sure turned out good... it's official, I'm addicted to smoking now! I didn't quite get a good seal, hence the apparent cheese mushroom growing on top. Since this was my first time smoking anything, I didn't want to toss a lot of food in there. I only used 1lb of sausage, some colby & monterey jack cheese, and mushrooms. I coated it in mustard and brown sugar. Next time I plan on putting in some jalapenos and bacon. Tomorrow I plan on trying some other meats... I have some baby back ribs, cornish hens, salmon fillet, jalapenos, and definitely some more sausage. Thanks to everyone for the wealth of information I have found around here, it helped throughout the whole process!
