This is my first smoke I've ever done. Picked up a Weber Smokey Mountain last night along with 10lbs of beef brisket and 10lbs of pork shoulder. I am on my 6th hour right now and temps are 167 164, respectively. It has been somewhat windy here in Phoenix today so I've had to close 2 of the bottom vents to keep it below 250 degrees. It'll jump to 280 if I leave all 3 at 25% open. I have been following the sticky on this forum and so far it has been working out well. I've noticed that the hickory I picked up at home depot only has a good smoke going on it for a few hours so I have to place a few chunks in every once in a while. I did the "minion" method so I hope the coals last for another 4 hours or so. The forums have been a great help! Thanks everyone for their tips. I'll update later with the finished product. Very nice aem. Your on the right trach for sure. I bet family and friends enjoyed that hunk of meat.
 
The meat is wrapped now in foil and both are now holding at 170. This plateau period is no joke!

Yeah, the wife already commented why I needed so much meat, but I figure Weber created two racks for a reason :) This should make for some good eating tonight (hopefully) and good snackin for the rest of the weekend. I picked up a food vac for the leftovers. I'm already wanting to try some ribs next, thanks to everyones great pictures.

Talk about a perfect pair - a smoker and a vacuum sealer.

You'll enjoy both, and the sealer for so many things you haven't even thought of yet. Which sealer did you get?

The SMF prepared me for my first plateau too... with all the seasoned advice that one needs to know!

Make sure you have a cooler and old bath towels ready for your rest...

Also sounds like your summer will be full of good food too!

Thanks everyone! I think for my first time it turned out very well. I learned some valuable lessons for next time. I need to get better wood chunks that last longer than the ones I had. I didn't have a thermometer that went up high enough for the first few hours so when I finally got one, the temps were in the 280's. I was able to keep a steady 240-250 for the rest of the smoke once I got the thermometer and adjusted the vents to compensate for the wind we had yesterday. I also need to invest in some bbq gloves because oven mitts and covering them with ziploc bags was not ideal! The camera's battery is dead but I will post the finished product later. Everyone who had some last night seemed to really enjoy it. I can not wait until my next smoke. I even had bbq for breakfast this morning :) Thanks again
 
YOU DA MAN!!!!! glad every thing turned out good for you. You did the right thing getting a thermometer.I don't know how anyone can smoke meat with out one. I have 4 of them, 1 for the smoker temp. ( I never trust the one that is built in) and the rest for what ever I'm smokeing. Hope to see more of you here and what ever you smoke.
