I got an MES 40 yesterday and I tried it out today. I've never been a huge fan of ribs but my fiancee loves them so I thought I would do them and try and convince her the smoker wasn't a waste of money. Frankly, these were the best ribs I have ever had. I was thrilled with how they turned out. I followed the 3-2-1 method, apple juice and all.
I used Jeff's rub recipe. I did a rack and half. I sauced the full rack with Mississippi bbq sauce, which is my favorite. I left the half rack dry. When it was over, I preferred the sauced ribs over the dry.
Here they are rubbed and ready to go. I got them at Sam's.
Some nice smoke. I used apple chips.
Here is the finished sauced rack. Everyone should give Mississippi bbq sauce a try. I will be trying Jeff's sauce sometime soon but I have always really liked Mississippi.
