I got an MES 40 yesterday and I tried it out today. I've never been a huge fan of ribs but my fiancee loves them so I thought I would do them and try and convince her the smoker wasn't a waste of money. Frankly, these were the best ribs I have ever had. I was thrilled with how they turned out. I followed the 3-2-1 method, apple juice and all.

I used Jeff's rub recipe. I did a rack and half. I sauced the full rack with Mississippi bbq sauce, which is my favorite. I left the half rack dry. When it was over, I preferred the sauced ribs over the dry.

Here they are rubbed and ready to go. I got them at Sam's.

Some nice smoke. I used apple chips.

Here is the finished sauced rack. Everyone should give Mississippi bbq sauce a try. I will be trying Jeff's sauce sometime soon but I have always really liked Mississippi.

Here is the finished half rack that I left dry.

Here are the cut shots, I don't think these shots turned out as well because they were really juicy and they looked dry in the pic IMO.

look good!

taking rib pics is always frustrating to me too...they always taste so much better than they photograph!!

PS  let us know when you compare MS to Jeff sauce... ;)

You're right, they DO look terrible!!  Private message me and I'll give you my mailing address so I can dispose of them for you.

You said they were for your Lady...   We didn't hear what her response was ?   They do look pretty darn'd good to me tho

She really liked them!  However, she wants to do some babybacks next time because she felt the spares were a little too fatty.

Nothing too special on that front, some corn and cheesy broccoli with mushrooms.  I really wanted to make some corn bread, even if it was Jiffy, it just sounded good.
