For Father's day and my first real cook I cooked a pork butt just shy of 8lbs, 3 racks of St. Louis ribs and a whole chicken on the Rec Tec.  I cooked everything @ 225 degrees.  The pork butt took 12 hours, the ribs took 4.5 hours and were overcooked, but still really good.  I ran short on time and wanted to do 3-2-1 method, but ended up doing 2-2-.5 and the whole chicken for 4.5 hours as well.  The ribs were overcooked by doing 2 hours in the foil.  Next time I do foil, I will definitely cut the time down to maybe just 1-1.5 hours instead.  I didn't get all of the before pictures because people were starving because I was running late with the food.    I used Myron Mixon's BBQ rub for the ribs and butt and his injection for the butt.  I used Myron Mixon's rub for the chicken and injected it with 1/2 cup of EVOO, 2T of garlic and onion powder, t of salt and 1/4 cup of Texas Pete's hot sauce.  I just injected the breasts.  I also made Myron Mixon's hickory and vinegar sauces.  My family tried all the food without the sauce and decided they didn't need any.  That made me feel pretty good knowing that the food was plenty tender and juicy.  I used a little of both sauces and they were really good.

Yes as you pointed out the wrapped stage can make the ribs too tender. I think your plan to cut the time back is spot on!
