My first sausage sticks

    I decided to make my first snack sticks. I've been wanting to do this for awhile and I had some Lem collagen 21mm casings left from making some maple sausage links last weekend which turned out really good by the way.
    I used about 7 lbs of chuck roast (got a good deal on sale), 2 lbs of sausage and some backwoods seasoning and cure that I got from rural king and I added a little spicy jerky seasoning and smoked it with some maple,hickory and cherry mix pellets.
    I've been using my jerky shooter to stuff the sausages I've been making lately and it takes forever! So I told the old lady Santa need to bring me a 5lb Lem sausage stuffer.
    I think they turned out great for a first time making the sticks next time though I'll make a lil more spicy with possibly cheese. I also converted my gas smoker to electric ( you can see the element in the bottom and can still use with either) but I was gonna put that in another thread

    Those are some nice looking sticks.  It looks to me like your first attempt at snack sticks turned out great!

  5. Those look good.  Have you tried themyet?  I haven't done an all beef snack stick yet, need to give it a try.

    Thanks for the compliments! They taste excellent! I Think the next batch needs some pepper jack cheese and fresh cracked pepper.

    Dang it that is a nice batch of sticks - Nice job on your first set of sticks.,

    They look real good.....I think from now on I'll be doing a blend for Snack Stix/Summer Sausage. I'm not a big fan of all beef after 2 tries now....Willie

    Welcome to the madness of snack sticks! We make them regularly, and I promise, you won't regret the addition of the cheese and pepper!

    But, the drawback is, you'll constantly want to experiment! Like I said, it's. Madness. :sausage:

    Thanks guys! I'm about to have to make more because I only have about 5 sticks left. man they went fast!!
