My first reverse sear!

  1. I'm a newbie at smoking and currently learning how to use my new Green mountain grill pellet smoker.

    After reading a couple of things on here regarding reverse searing steaks I thought I'd give it a go myself, I bought a couple of prime rib on the bone steaks, gave them a light coat of salt, pepper, onion and garlic powder, set the GMG at 230F and pulled them off when the internal temp hit 125 (which was roughly 1.5-2 hours but these were thick steaks), rested them for 10 mins and then seared them for roughly 1-2 mins each side.

    I have to say they came out way above my expectations, so juicy and perfect medium throughout the whole steak, I will definitely reverse sear from now on whenever time permits.

    Looks pretty good. It's funny how many people actually underestimate the effects of the reverse sear. Most just look at it as time wasted for not much gain. Until they have one, then it's a whole new ballgame. That's not to say I don't still cook'em the standard way, because sometimes you just don't have an hour+ just to cook meat.
