I'm a newbie at smoking and currently learning how to use my new Green mountain grill pellet smoker.
After reading a couple of things on here regarding reverse searing steaks I thought I'd give it a go myself, I bought a couple of prime rib on the bone steaks, gave them a light coat of salt, pepper, onion and garlic powder, set the GMG at 230F and pulled them off when the internal temp hit 125 (which was roughly 1.5-2 hours but these were thick steaks), rested them for 10 mins and then seared them for roughly 1-2 mins each side.
I have to say they came out way above my expectations, so juicy and perfect medium throughout the whole steak, I will definitely reverse sear from now on whenever time permits.
