my first real smokin sunday

Hi, from mississippi,
this weekend was my first all by myself smokin grilling Sunday.
I recently got an old hoopty smoker from an individual. I had to have it sandblasted becaue the rust and gunk was so bad. I really didnt think it was going to be useable. got it back and it looked fab. So I rigged up a grate, is that what it is called? from another non useable smoker. I also have a charcoil grill that i put beside it.

I went to the feed store where you can buy wood that you scoop yourself. I got apple. I have never used apple. I have used hickory.
I also used a bbq sauce from the Smoke house here in Laurel. I added some stone ground mustard which made it not as sweet . I added a tiny bit of beer because thats just what ive always seen done. Man it was so good. Next I am going to learn to make my own bbq sauce.

Everything went well. I left some meat with nothing on it so i could taste the apple which was so very good.

The ribs were spectacular, the best ribs i have ever made.
The only problem I have with the smoker is It wont close all the way which lets out a lot of smoke. I improvised which i wont say how on here. LOl.. I didnt undercook or burn anything and everything was so good. Only thing is by the time it was all finished I was full.

Well congrats on that first smoke! Looks like there's going to be more smokes along the way... real soon.
 
Darn, I just finished off a pizza and you went and made me hungry all over again!

not a bad smoke & why you holding back on your sealing the smoker-we share everything here-well almost.
