is a Brisket. This is the non-fat side. Rubbed and in the fridge for 12 hrs.


6.88lbs from Costco


Fat side shortly after I put it in the smoker. Internal temp at this time was 39.9.


Kingsford briquettes for the start, Lump Mesquite Charcoal to keep it going.

Raw (soaked) Mesquite and peach tree trimmings for the smoke.
