My first Mac & Cheese

Just wanted to say that this forum, and you guys are awesome. I'm still pretty new to smoking, but working on it.

I've been a M&C nut since I was a kid, and trust me that was many moons ago. So here goes!!

I found this recipe and figured that it couldn't hurt to try it.

This stuff was amazing!!

Four Cheese Mac & Cheese

What you'll need

1 (16 ounce) package of elbow macaroni

1/4 cup butter

1/4 cup, all purpose flower

3 cups milk

1 (8 ounce) package cream cheese - cut into large chunks

1 teaspoon salt

1/2 teaspoon black pepper - I used a lot, Love pepper!

2 cups (8 oz.) Gouda cheese, shredded

2 cups (8oz.) Extra Sharp Cheddar, shredded

1 cup (4oz.) Parmesan cheese shredded               ( shred all cheese yourself from the block. Don't use the bag cheese. Much better!)

What to do

1. Cook pasta according to package directions, in a sauce pan, melt butter, and whisk flour in to the butter. Cook over medium heat for 2 minutes. Whisk in milk and bring to a boil. Cook for 5 minutes until thickened. Stir in cream cheese until mixture is smooth.

2. Combine 1 cup of Cheddar, 1 cup Gouda, Parmesan cheese, pasta, and cream sauce in a large bowl. Spoon in to a 11 x 9 1/2"  aluminum pan. Coated with non stick spray. Sprinkle top with remaining cheddar, and Gouda

3. Place in the smoker and cook 1 hr. at 225 deg. Use wood of your choice.

Thanks for letting me share this. I tried this one with mesquite. The mesquite was a little much for the family. So, the next night I did it with velveeta, I just laid the velveeta next to a cream cheese box, for measurement. Did not want to over do it.

Just added left over smoked elk kielbasa, and smoked with apple. The MRS. actually used the word (Heavenly)

that looks awesome... I should mention... When we post a recipe that was found ... ether a person or particular web site... we try to give credit to that person/website... was it from somebody here on the forums ??
