Well, here is my first attempt at "Hot Dogs". Used Collegian casings, 30 mm (for brats, cause I didn't have the smaller size) They were a little larger, and not all the same size, but hubby loved them. They took about 2.5 hrs in the smoker with Apple chips and a mix of Beer and Water. Started at 165 degrees and had to go to 210 to get the meat up to 138 degrees. Hot water bath at 175 degrees, brought them up to 156 degrees and immersed in a ice bath. They were cooked and tasted great.
