Well, here is my first attempt at "Hot Dogs".

Used Collegian casings, 30 mm (for brats, cause I didn't have the smaller size)  They were a little larger, and not all the same size,  but hubby loved them.   They took about 2.5 hrs in the smoker with Apple chips and a mix of Beer and Water.

Started at 165 degrees and had to go to 210 to get the meat up to 138 degrees.  Hot water bath at 175 degrees, brought them up to 156 degrees and immersed in a ice bath.

They were cooked and tasted great.

I used this but did  half again the amounts of meat and spices

14 oz ground chuck

11 0z. gr veal

11 oz. gr. pork

I chilled the meat and re ground 2 times then added

1 1/2 the amounts of the spices:

salt 3 tsp

Cure #1 1/2 tsp

White Pepper  1 tsp.

paprika 1 tsp

coriander 1 tsp.

mace 1/3 tsp.

Onion powder 1/2 tsp.

cold water 1/2 cup

Mixed meats, added spices and cure and chilled in frig for a couple of hours before stuffing.

Dogs turned out to be about 5 1/2 to 6 inches long and between 1 1/8 and 1 1/4 thick.  Made 18 dogs

Next time we are going to omit the veal and make all pork and beef and I think I will try smokey Paprika.

On to our next project, two butts for this weekend camping and then home to try beef sticks
