My first Fatty

Well, it turned out just as I predicted it would... A big sausage meatloaf..

I have a problem with portion control. If I have to feed 3, I have enough for 6.. If I need to feed 10, food for 20... The last time I threw a party and cooked for 15, I sent every one home with lunch for the next day, and ate leftovers myself for a week...

I used 2 packages of sweet Italian sausage, and 2 packages of ground pork.
Stuffing consists of: Green/Red/Yellow/Orange diced peppers, diced white onion, sliced mushrooms and mozerella cheese.

The stuffing looks thin in the pictures, but that is just the end. The middle had a lot more substance. I have to work on my stuffing technique...

Looks good. How did it taste? Eat the evidince and try again. I've ended up with some mega-fatties myself. Practice, practice, practice, you will get your technique.
 
Bill - I have to agree with you there... Wow... Just got done with my first piece and this thing is nice. I see plenty more of these in my future :-)

My fiance says it's the best thing I've done on the smoker. I was a little surprised by that.

looks great..I have 5 at the shack and seem to always cook for a platoon also. and the news says america is getting obese.hmm.. glad my grill is not huge. as i load her up..lol.
 
Great looking fatty! I can't find anything wrong with smoking too much meat. Well, yes I can. I have to eat up the leftovers in the freezer before I can smoke a bunch more to load it up again with leftovers. I hate the wait!!! Should have it cleaned out enough in the coming week to fill my neighborhood with smoke next weekend.
 
looks good pditty(fun) I like your meat retio-I don't care for the jimmy dean-I grind my own beef -pork& sausage,many kinds-and mix what we in the mood for.great color with the peppers& can't loose with the motz.there are so many ways to make a fatty it's mind boggeling.I have dazzeled alot of functions with those things.seems everybody loves them unless there to greasy.keep up the good smokes.
