My first fatties with q-view

I did two fatties, two pounds each. For the first I used JD maple and stuffed it with runny scrambled eggs and cheddar cheese and then wrapped in bacon. The second is JD hot stuffed with diced jalapenos and cheddar cheese. I also butterflied some chickens to fill the other rack.

Everything came out great. The eggs in the fatty were done but not dried out.

Congrats on the Q! You're going to making FATTIES a lot more often. I like those chix too, they lokk nice and tasty.

As far as the difference in smoke between the bacon wrapped and unwrapped fatty, I would have to say that the bacon wrapped fatty has more of a smoky flavor. I think this is due to the fact that the bacon absorbs more smoke than the sausage. If you look at the picture of the sliced fatties you can see the smoke ring is very similar. If you eat a piece of the bacon by itself, it has a very smoky flavor.

While this turned out good, I think next time I would replace the cheese in the egg/cheese fatty with hash browns or obrien potatoes and just add a slice of cheese later with the english muffin. What I want is an easy breakfast sandwich.

Foul no fair. I'am sitting here having shredded wheat when I open this thread and what do I see but two excellant fatties. Boy -o- Boy this ceral is getting rough to get down. I want, NO I need a fattie fix. My schedule will not let me fire up the smoker until Saturday. Oh the pain I am feeling. Gotta Go
