I've been wanting to get a fatty on the smoker for a while now. I've prepared one tonight to throw on the smoker on Thursday (with the turkey). (I'm not sure how well it will store completely assembled, but we'll see!) SWMBO claimed the kitchen all day tomorrow so I didn't have much choice!
1 lb. Jimmy Dean sage sausage
Generous sprinkling of Rendezvous Seasoning
4 slices Sopressata Italian Salami
1/8th of one Vidalia Onion - Sauteed
1/8th of one Red Bell Pepper -Sauteed
1/8th of one Green Bell Pepper - Sauteed
4 cloves of Garlic - Sauteed
Generous sprinkling of shredded Sharp Cheddar
Generous sprinkling of shredded Mozzarella
Bacon Lattice
I forgot to take "assembly" pics along the way, but I have one of the finished product ready to hit the smoker. I plan to put some rub on the bacon prior to smoking.
I'll be sure to follow up with pics of it when it is finished.
