Well its in the smoker now...a 10.4lber...i rubbed it and let is sit in the fridge over night and put it in the smoker at 5am today....qview will be comming soon.......woot woot
 
Good luck with the smoke - I have 2 that have been in since 7 last nite and are stalled at 169 for the last 3 hours - hope to have a few pics to post sometime soon
 
Good luck with the burn. I did one I got from Costco a few weeks ago. Never did reach that plateau at 170. I took it off when it hit 195 let it rest for an hour and then pulled it.

Good luck. Putting 3 on this weekend, they are all around 7#. Picking them up from the butcher tonight. Will inject and rub tonight. Put them on the smoker tomorrow early-mid afternoon.
 
Well im LOST guys...i put it in at 5am and the temp stayed at 250 the whole time....i checked the internal temp at 11:45am and it was at 170....i was amazed...i foiled it and let it go....i figued it would stall any time.....well i checked it again at 2:30pm and it was at 210....all the way to 210 in 8.5hrs.....i have no clue? Its in the cooler now....i hope its still good....i was expecting atleast 10hrs to do this thing.....but 8.5hrs....what the heck?

Just goes to show you that somtimes you can't use the clock as an indicator. The therrm tells it all.
 
You can never tell how a chunk of meat will smoke they all are differant and the meat might or might not stall it could smoke fast or slow. So count your blessings it went fast and not slow. I have had they go to 16 hours before and some 7-8 hours there are alot of varibles. Wind, temp outside, and smoker it'self
 
Well here is the end product....i was scared it would not be right, since it cooked so fast.....It is delicious(SP)

Looks great - glad yours went quickly - I had one stall on me last nite for 3 hours and thought it was never going to finish - turned out great though
