I think this is my first batch of BB's Sunday afternoon. They turned out great. The meat didn't fall off the bone but when you bit into it, it cleanly pulled off the bone. Really tender too.

That's the texture I shoot for in my back ribs, just a bit of connectivity in the meat but separated from the bone. Definately look like some finger-lickin' lip-smackin' ribs my friend.. Good job Ray

My brother and I made two slabs of ribs last weekend one BB's and one spares. We cooked them both the same way 2-2-1 since the spares weren't huges ones. The spares came out more tender than the BB's by far. The spares were all most fall off the bone but when you gave them the bend test they didn't break apart. The baby backs weren't tough by any means just a little tougher than the spares. This was both of our first times cooking spares we always cook BB's. I am going to try some more spares in the future and see if I have the same outcome.
