Thanks to everyone here for great advice on how to pull this off. I went last week and bought a square upright Brinkmann, oiled it up and tested it out Sat. with good results.(I actually posted pics of this, but it quickly went away).
Sun. morn went to the store, got a couple of pork loins, some leg and thigh quarters and some Italian sausages.
Soaked the chick in H2O, kosher salt, fresh pepper, lemon juice, honey, and rosemary. About 4 hours. Then it wa srubbed generously with store bought lemon-pepper mix.
The pork was coated with yellow mustard, then rubbed with a mix found deep within this forum. Wrapped and back in the fridge for a couple of hours.
Potatoes rubbed in evoo, kosher salt, and garlic powder, on the gasser set as low as it would go.
Cat was enjoying the day.
