i did my first all night smoke last weekend and it came out amazing. i smoked 2 14# briskets and 4 12# pork butts. i used some hickory and cherry wood. smoked the briskets for about 17 hours and it was well worth it. i also injected all the meat with a mixture of apple juice and captain morgan, and they came out so juicy. i have to thank everyone on this great site because i couldn't have done it without all the great tips on this site. i also must thank my neighbor 1894, he let me use some of his charcol when i started to run low. i felt so proud when everyone couldn't stop giving me compliments. thanks again to everyone on this awesome site. here are some pics.,

yes coyote, you good taste just a hint of the rum, but then again it could be the seven captain and cokes i had during the great smoke. who knows, all i know is i had a great time!!

Way ta go!!! Gotta love brisket!! Wish I could figure out how to slice that nice. Last one I tried to slice was all over the place.

must admit i had a friend of mine do the slicing since he's a chef at a local steak house, but i was right there getting all the tips i could.

kinda makes me laugh, when i did a brisket not to long ago i come up with bright idea of trying to use my cordless elec fillet knife to slice the brisket. was not a good move, all it did was the back and forth motion puled it apart, but it was fallin apart tender, i took it too high for slicin i think....
