Last weekend I tried a Cornish Hen, which is something new for me. I used a rub I had made for my pork butt (typical eastern NC rub), and smoked it with applewood. I also injected it with butter and garlic just under the skin. I cooked it great, the skin was a bit crunchy, but the inside was very bland/no flavor. It was a real disappointment, but I want to try it again. Any ideas???
