Here are some ribs a did last weekend.
They turned out great! Probably the best I have ever eaten and the best I have ever cooked - Even my 4 year old liked them! He ate almost 3/4 of a rack!
Usually, I do STL style ribs. I changed it up a little this time and did some babybacks.
I think I perfected my rub and sauce too. Its amazing what a few tweaks here and there do. Using super fresh spices also helps a ton!
I smoked these in my MES 30. Went with the 3-2-1 method and finished them off on the grill for the last 10 minutes to get a nice glaze. Used a mix of Maple and Hickory wood. I had to cut each rack in half for ease of fit into the smoker. I added honey and brown sugar to the ribs when wrapping them after the first 3 hours. I have played with different honey types, and prefer Orange Blossom Honey over Clover.
