Had a buddy from outta town, come INto town yesterday........so i did up some spares and abts......
gotta a HECK of a deal on the spares.....1.49/lb............

now these are FULL spares........so i had to get em to St. Louie style......
all trimmed up
put a mustard rub on em first
with my special rub next
onto the ecb
then made up the abts........minced up some of my smoked garlic cloves, then some green pepper, and onion, to mix into the creme cheese
onto the ecb.........the ribs are foiled by now
ribs sauced the last 30 minutes.........i did a 2-2-1 with mostly cherry.......
i need to get a better camera.........this shot is SUPPOSED to be the smoke ring
weird thing about these spares tho........NO membrane to pull...........which was wierd............BUT....these were the BEST i have dun to date.........but......you never know if its the COOK.........or the meat.............but momma is giving up her 5-spice spares to do these from now on................
