my basic rub

    It looks good!

    You may want to substitute turbinado sugar for the regular sugar.

  6. I tried making this tonight using fresh Penzy spices and found the cumin really overpowering. Kinda like I just rubbed cumin on alone. Maybe it's the Penzy's as their stuff is really fresh. Has anyone noticed a strong cumin flavor?

    That is a lot of Cumin, unless you like it...Try 2tsp for that recipe, also going over to Turbinado will require double the amount of regular sugar to keep the same balance...JJ

  10. I like this one! I use something similar. I haven't tried the turbinado, as Al suggested, but I hear it helps create an AWESOME bark.... I just haven't come across any at my local grocery store. I may have to hit up a specialty store for this. My rub I created is VERY similar... The biggest difference is that I always use smoked paprika, and I also add finely ground coffee and cocoa powder. I  think you have a great recipe with awesome spice ratios. And the pic is SPECTACULAR!!!!
  11. the rub I use is almost the same except I use brown sugar, and I never measure.

    So it's never The "same" but always the same spices...LOL

    Made it used half the cumin used smoked paprika and turbinado raw sugar but doubled the sugar amount.  Used it on shrimp and salmon so far and its really good.  Thanks for the recipe.
  15. Just to make sure I am understanding this right. If I want to use the turbinado raw sugar, I will need to use a cup instead of 1/2 cup of regular sugar?
  16. I have never measured any spices, and likely have never used the same combination.  I just start throwing stuff in a bowl until it "feels" right.  Half the fun is tasting how it all comes out!
