My attempt at Fire Water

So after reading this post http://www.smokingmeatforums.com/t/133831/experimental-fire-water-aka-acid-rain/ i wanted to try my own firewater.

I used:

- 10 Habeneros cut in half (seeds and all!)

- 3 cups water (hot)

- 2 tsp Red Wine Vinegar (didnt have rice wine vinegar)

- 2 tsp kosher salt

- 3 cloves of garlic

put all ingredients in while water heated up and crushed with the handle of my meat mallet (i need a muddler). Poured water on top and set on counter. I'll put it in the fridge tonight. Haven't tried it yet but here are pics from last night


Chopped and put into jar to muddle

Nice steaming bath of hotness!

That sounds good. I am gonna have to give this a go. I love HOT stuff and can't wait for my trip to Mexico every year to eat Habanero Salsa that is not some watered down version. I may see if I can get some seeds while down there to plant real Mexican peppers. Most of the stuff in the US has been genetically modified to produce about 1/4 of the heat.

KathrynN any reason not to use a food processor then add the water? 
I did mine like my grandmother did.  Get the little cayenne peppers....clean them up.  Stick them in the jar....and boil white vinegar...and pour over them.  Can use apple cider vinegar....the longer they sit the hotter they get.  We use is on turnip greens, cabbage and stuff like that.

Haven't seen these done like that with the food processor.
 
WOW weapons quality food. Homeland Security will be wanting to know what you intend to do with your culinary rocket fuel.

I was thinking food processor and cheese cloth to strain but heck I will just do it the way you outlined and check it out. Thanks!

LOL Linguica.. Use as an additive to baked beans eat a couple plates then get on a coast to coast flight!

i think she is just going for "hot vinegar"...not necessarily having the pepper pieces on the food. so the peppers would infuse heat into the vinegar for pouring

haven't had the guts to try this yet...will do tonight
 
You got it...it's the Hot Vinegar kind instead of Acid Rain.  But that is the way our family has always done it.  May try this for my Son tho.  He loves Habs.
 
I would say....If It burns the hairs out of your nose when you smell it....not going to taste it!  haha!

My Husband and I were talking about opening a small bar with foods at one point.  A friend's Dad made a blow torch green hot sauce.  We were going to let him keep some there...and make folks sign a waver before they used any.  I tasted it and I thought I was going to die!

So i gave it a try yesterday after a week of sitting in the fridge....it actually wasn't nearly as spicy as i thought it would be....it also didnt take on the reddish color that DirtSailor's did  :/

maybe i needed spicier peppers?

i'm going to remove the peppers...cook liquid down to about half to make a concentrate then put peppers back in...maybe this will concentrate the heat

That still sounds like it would singe my nose hairs!  Big giggle....don't like the hot stuff...but my kids do!
