This is my first FATTY it was made of 3#'s of maple sausage, onions, green peppers, jalapenos, scrambled eggs, bacon, shredded cheese and salsa ! pulled off a alittle over 180 between 3-4 hrs cook time.

I think next time i need to roll it out thinner and add a tad bit more suuffing but I won't complain its still good !
 
Nice fatty! Remember, there is no such thing as a bad fatty, there are good fatties, better fatties and great fatties! Oh, and they are habit forming! Stear clear of your cardiologist!

 
Nice job! That smoke ring is incredible. I agree with rolling it out pretty thin and stuffing as much filling as possible inside provided you can still get it to seal right. Keep up the good work. Greg
 
That is a great looking fattie. Excellent smoke ring for sure on that smoke. This is one of the things on my ta do list.

Way to go on the first fattie!!!

The scrambled eggs is a great idea. Did you cook the eggs before putting them in the middle of the fattie, or did you add scrambled egg mixture over the "guts" of the fattie? Thanks!!

Yeah I scrambeled the eggs added onions, greenpeppers and jalapenos then i spread salsa and shredded cheese over it. I kinda wanted it to be omlet style !
 
Good q-view. I havent heard of the egg. Looks like after smoking 3-4 hrs it would be like rubber. Guess I'll have to try one.

I think having the salsa with the eggs kept them moist they werent rubbery at all i guess i never thoughtabout them rubberizing till you said that just glad they didnt they really held up well.
