Hey Dirt.... They look great.... You gonna give us the low down on taste/texture etc....

Taste fantastic for a store bought spice kit mix.

Texture is slightly drier than I normally get using the managing casings. Which I actually like better. The edges are nice just like the rest. Before peeling the muslin I felt that the smoke might be too strong, but once peeled it is nice and mellow, spot on perfect.

Where can I find the fabric?

Any fabric store will have it Adam. Just ask for non-bleached muslin. We have two dedicated fabric store chains here and they both carry it. For a template I used done of the 3 pound casings that came with one of my sausage kits. By the time I ran them through the sewing machine I was only able to get 2 1/2 pounds in each one, which is fine by me. For thread I used whatever was on my wife's machine and I set it to some zig zag pattern I think. I made two passes along each seam just to make sure it'd hold, and it did!

I should also mention that there is different weights of muslin. I'm can't remember which one I bought I just looked at them to see how tight the weave was and that was what I picked!

Honestly you could probably use bed sheets! Wife may not like that much though!

It just seemed like the right thing to do. I washed them with vinegar yesterday and dried them. Just plain water this morning.
Morning Case,

what a great idea

just to clarify for me, you washed them with vinegar first? (was that a soaking?) and for how long? then did you rinse out the vinegar before the drip dry? was your plan for these to be a one time use , I will have to try these.

Thank you! The vinegar wash was about a 4:1 water to vinegar mix. Soaked for about 15 minutes. Rinsed then drip dry. I soaked the casing in straight water for about 15 minutes prior to stuffing.

I had hopes of being able to reuse them but it didn't work out that way. They peel off fine but if there is any part of the sausage that is larger it won't peel past that hump! One did peel right off the other I used a seam ripper to pull the thread. I suppose a wash and see back together could work.

I definitely will be using muslin from now on. It's cheap and I can custom size the casing for what I want to do.

First I saw this Case, and it Looks Great !!

The reuse part was one of my thoughts, now your talking great savings plus the custom sizing.

Thanks,

Tom

As long as you have consistent size, there should be no problem getting the muslin off. One thing that makes that consistent size hard to do is that the fabric stretches. I'll give it another try in a few weeks. I have several muslin casings made up.

Thanks Bear!

Speaking of pork roll I have a recipe for pork roll that I plan on trying. May have to case them in the muslin! Now the wheels are a spinning!

I have used muslin bags for a long time to make deer bologna. Never known of anybody reusing them. If u put in 2 gal. ziplock bag (after smoking & water bath)  then let set in frig for 2-3 days they peel real easy. (bag closed)  Just make slit with knife down side to peel off the whole bag. For those like me that don't have sewing machine or just don't want to sew there own bags here is a place to buy them.    http://stores.butchersupplycompany.com/cloth-bags/  This comes out to less than $.60 a bag if buying the 100 pack.  Also don't understand reason for soaking bags. I use mine straight out of pack. Please explain reason. I also use contractors string to make strings to tie bags shut & use for hanging.

The bags were probably manufactured overseas, in a dimly lit warehouse infested with rats... Soaking, washing, disinfecting I think is mandatory considering they are coming in contact with food...
