a buddy nearly has me convinced to get rid of my charcoal UDS for an electric unit (he generously loaned his cookshack to me for the weekend)
being an engineer and a guy who likes to tinker i'm thinking about converting my UDS or building a new one with a PID.
So here's my question, if I got a dual probe PID can I for example run the unit at 225*F until the second probe (in the meat) reaches 180 then have the unit drop temp until the inside of the smoker stays at 140*F?
