If I am am doing 2 bone in pork butts in the GOSM for a picnic the weekend after Labor day weekend, how will this effect cooking time or will it? I am going to do 2- 6# butts, and based on previous butts I would expect about 11 hours if I was just doing one.

Thanks for any help.

The smokers temp is what it is whether or not you have 1 or 6 butts in it. I cook butts in my Perfect Flame smoker one on each rack for a total of 4. Still roughly 1.5 hours per pound. Monitor the temp and enjoy! Good luck!

thanks, thats what I was guessing.

Each piece of meat can cook differently due to texture, but for the multiples I've smoked they have generally been done fairly close to each other.....Good smokin.....

thanks, I am planning on starting them @ 8 or 9 p.m. the night before so I can hopefully pull them @ 9 a.m. the following day, then wrap in foil, and atowel, and throw in the cooler for the 1+ hour drive down to the picnic.

Sounds like a plan. I think that more meat in the smoker is effected more by the temp and recovery time of the smoker. If you can maintain smoking temp and recover quickly from opening the door it shouldn't be a problem. I have had butts that smoked over 12 hours before though. I would give myself a little extra room. They will stay piping hot in the cooler wrapped for 4 hours + so I'd rather have em done and steamin than tryin to get em done and in the car on time. I've learned this the hard way.

My first smoke ever (which was on my homemade 20" diameter classic offset smoker) was a single pork butt and it took me ~ 14 hours (for my 7lb butt). Since then, I have only smoked 5-5.5 lb (max) butts, and it takes me 11-12 hours no matter how many I put in there. About a month ago I had 7 of these and it still only took about 10-11 hours or so. If you have individual probe thermometers for each butt, that's great. If not, you could try probing your largest butt (no "butt jokes" here) and just pull them all off once the largest reaches about 200F internal. If the smaller ones go a little longer, it's not going to hurt them. Remember to post some pics.

thanks for the info re: cooler time, I will probably get them on a little earlier, so I am not butting up against the time I have to leave waiting for the butts to get done.

What Pig said Jim, start them early to be safe. I put a butt in the cooler wrapped with a single towel and 8 hours later (due to unforseen work) I expected it to be cooled down. I was wrong and burnt my arm when it touched the foil......Once it's done, wrapped and in the cooler you got plenty of time....

By starting early, you will have plenty of time to drop some off at my place before the picnic. That way I can let you know if you should take it to the picnic or leave it safely with me to dispose of....
