Mule's smoked loin and brisket in the MES 40 with AMNPS. Qview

  1. Good morning[IMG]  [IMG]  . Today I will be smoking a small pork loin and a small brisket in the MES 40 with the AMNPS[IMG]. I preheated the MES to 250°. put the meat in then got the AMNPS going. For today's smoke I am using oak pellets.

Here I am applying the rub.

Let it sit for a few[IMG]. The rub is starting to start taking on that nice

color. I don't use anything for a binder[IMG]. This is the result of the

salt drawing out the moisture in the meat

    More to come.

    Happy smoken.

    I am in.    [IMG]

  3. Here is a pic after 1:45 min. I probed the loin and it is 128°. I will probably take it to 150° IT. If it was for me I would not go that high. However it is going to older "do you call that done" people.

    More to come.

    Happy smoken.

  4. Here it is at 144° I just couldn't bring myself to going to 150°. I foiled it for a rest.

    I will slice later.

    Happy smoken.

  8. I removed it from the smoker, Wrapped it in foil for an hour, then

into the fridge to cool, then sliced.

Here are the final shoot's of the loin.
