As has been the last few smokes it took longer than normal get be ready. The brisket took 9 hours. I started the toothpick test at 180°

At 195° I like the way it probed so I called it done. Wrapped in foil for 45 min. then into the fridge to cool. I am still not sure if I will slice

We see sliced pics all the time, not many chopped pics.

So here we go with the pics.

Adam Voted chopped so chopped it is.


Chopped some more. The cutting board is a little small even

for this small brisket. It won't all fit at once.


 Vacuum sealed and ready to travel. Juices from the drip pan

added. It has a very nice flavor. 


The bag is bigger than it looks. I normally  don't do a point by it's self. I am a packer kind of guy. This will be going with a friend to a family reunion. I think they may score a point. They also will be taking a couple of blocks of my smoked cheese.

As far as letting a super mod convince you to chop instead of slice, I'm not sure what this place is turning into!! Next thing you know we'll be microwaving and using liquid smoke!!!'
