Getting thing smoked for a birthday party. Thursday I rubbed the 9 LB butt with my rub. Put it to bed in the fridge. Last night I loaded the AMNPS with apple and hickory pellets. I got it smoking real good, set the temp to 230° put the butt in and went to bed.
