Hello everyone. I am new to smoking meats and hope to learn a lot from everyone. We had an electric smoker years ago and only used it a few times. Since I am now retired I hope to make smoking meats a hobby which we can both enjoy. I miss my Texas BBQ so much. I am originally from San Antonio and several years ago we retired to a small town in North Carolina, New Bern. It is a lovely city and we enjoy not having the rush hours etc. We just purchased a Master Forger vertical smoker from Lowes. Once we got it put together, we were able to season it yesterday. I have some chicken wings to smoke today as a launching point. I also made some classic Texas BBQ sauce for dipping today as well! I choose apple and cherry wood to start off with...for the chicken I am using the apple. I am open to any and all suggestions!
