Hello everyone.  I am new to smoking meats and hope to learn a lot from everyone.  We had an electric smoker years ago and only used it a few times.  Since I am now retired I hope to make smoking meats a hobby which we can both enjoy.  I miss my Texas BBQ so much.  I am originally from San Antonio and several years ago we retired to a small town in North Carolina, New Bern.  It is a lovely city and we enjoy not having the rush hours etc.

We just purchased a Master Forger vertical smoker from Lowes.  Once we got it put together, we were able to season it yesterday.  I have some chicken wings to smoke today as a launching point.  I also made some classic Texas BBQ sauce for dipping today as well! I choose apple and cherry wood to start off with...for the chicken I am using the apple.  

I am open to any and all suggestions!

Hello and Welcome to our addiction.  Many good folks here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Sounds like you have a solid plan for the chicken.  Start a new thread and let us know how it turned out.  Be sure to include picts.  We LIKE picts. 
 
Thank you all for your greetings.  I already completed the e-course and have been searching for things in the forum since sunrise and finding lots of good information.

  Going to try those wings today and see how it goes.  Now, I have to figure out how to split my time between quilting and smoking...cannot do them both at the same time!

Well now ms jess I beg to differ.  Grandma quilted.  Get a good dual probe therm ( maverick et732 or maverick et733 ) and you can monitor the grill temp on the smoker and the internal temp of the meat digitally from a distance.  Just set the hand held beside you and quilt away.  If temps drop you will know it instantly.  Multi tasking!!  Good luck.  Keep Smoking.

 Yes I am a grandma 10x over...so you know I can multi-task...BTW I have a remote on order...plus a few other accessories I just could not do without.  
 
I have 3 of my own and 2 from my second wife.  I just recently inherited 4 quilts differing age made by my Grandmother.  The art is slowly dying off it seems.  DARN shame!  What a beautiful piece of American folk art they are!  ART!!! is the VERY word to use.  The love and quality that goes in to each quilt, each design is fantastic!.  Thank you for carrying on the tradition.

I even JUST remember Grandma making lye soap ( OK so I'm not 20 yrs. old ).  Is such a shame these skills will soon be lost forever.  Sorry to go past Hello in Roll Call.  Guess this should have been a separate thread.  Glad to have you.  Keep Smokin!

You can never have too many!  Except that at Christmas it gets a little tight...checks fly everywhere...get what you want! My motto at this juncture in my life...I don't remember my grandmothers making soap or quilting...I picked up the addiction when I retired and fell into a fabric store...full of quilters...I am still a novice but I love it...recently I took up hand quilting in lieu of other methods...I belong to several quilting forums, and their talents are absolutely fantastic...you would be surprised at the number of quilters ....the art is coming back...I love the civil war era quilts...and their history...absolutely wonderful and fascinating!  

So now I am enjoying this new adventure as well.  Our smoking session went very well this afternoon.  I just tried the wings and they were wonderful.  I also smoked some fresh sausage and finished it off on the grill, along with the wings to crisp them up!  My only issues were my rub was too hot...need to cut back on the peppers!  BBQ sauce was good, but needed a little more sugar or molasses!  Of course I am having the typical problems with the smoker, but have the information from the forum on what to do!    Here is a picture of today's trial and error!  As I mentioned...rub was just a little too hot...
