More Sweet Bologna

    Did 5 more pounds of sweet bologna the other day, used up some fibrous and a cloth bag. The larger chubs are going to Paducah with us in Sept, smaller chub is for the RV Resort manager. I wrap the chubs in freezer paper after vac sealing.

    Cut pics are of the ends i cut off before vac sealing.

  6. My question exactly.  It sure looks good.  Would love to know the details on how long, what kind of wood and what temp.  Might put that on the list of things to try.

    I get this mix in Amish country PA. I'm sure that one y'all smart doods can figure out the recipe.

    And i have heard that AC Leggs #116 and some brown sugar works good. Dont forget the cure......EH
