more smoke

  1. Hi all,

    Just bought a Masterbuilt  30-Inch Black Electric Digital Smoker, Top Controller. Used it for a batch of beefsticks last night for the first time.Sticks turned out good but not enough smoke to them. Was not able to get it smoking until the temp hit around 160-170. Smoked great at 225-275 when I seasoned it, just not at a lower temp. This is my first digital controlled smoker. Any tips? Thanks.

    You would do better with an AMNPS or the tube depending on altitude, a mailbox mod may also help. here are a few links.

    What he said! If you are just using chips and are soaking them-don't. It just slows down the smoke. Also add chips while it's still preheating so the heating element is on long enough to get them going. Exhaust vent full open and pull chip loader out a couple inches to let more air in.   6. Didn't soak the chips, had the top vent wide open, but I'll try pulling the chip loader out a little and adding chips during warm up. Nice to have options and thanks very much for the advice and links Tropics & Sota D. I will be smoking again this weekend.

    I've beem using chips in my MES 30 for over a year(since I got it) and haven't had any problems other than having to constantly load more chips. I just got my AMZNPS, but haven't had a chance to try it out yet. Definitely the way to go, but it can be done with chips too. Good luck with this weekends smoke-post pics and let us know how it turned out! David.

    I agree on the AMNPS. The MES units are not designed to cold smoke which is why Masterbuilt sells a separate cold smoke attachment. Since their attachment is $75 I opted for an AMNPS with a mailbox mod and it cold smokes perfectly.

    AMNPS - then you won't have to worry about the smoker being hot enough.  Can even use it for cold smoking.

    I have used the chip loader once...just to try it out...ended up pulling the loader out and hooking up the mailbox so I could use the AMNPS.
