More bacon with Pops brine and mod to MES30

  1. A friend of mine for me a good deal ($3.25lbs) on a few bellies so I brined them for 14 days with pops brine. I smoked 1 belly last evening over night for 10hrs until it reached 145...of course they are wrapped and in the fridge and forgot to take a round 2

    I didn't like the racks so I cut 3 pieces of rebar and hanged the bellies with string. more pics to come

  4. I had to pulled them and had a string to the middle..was starting to sag...gravitiy HAHA
  5. Bacon is all sliced up..hats off to bacon ever...I ended up smoking the bellies for 10hours. One of these days i'll order me a slicer but until then..its manual!

    Looks great! Props on the hand slicing..takes a lot of patience . You can charge more for it now too haha
