Hiw often should I mop the brisket
It's up to you, some don't mop at all.
What are you mopping with?
Just know, every time you open to Mop, you will be adding 20-30 minutes to the cook...JJ
Usually don't mop...^^^What Jimmy said.
But I do wrap in butcher paper 160-165 and that keeps the brisket pretty moist.
