Monster Brisket !!

    Just my 2nd Brisket but first on my new smoker ( build thread under "other builds" called the "one tom monster) ... I have 22 of them to do for a friends company picnic next week so this is "practice". It's been on for 8 hours now. The pic was taken at about 3 hours in. More pics to come...

    THANKS for all the brisket how to post!

    ALL DONE.... pulled it to seperate the point and flat but both were at the same temp, 200 snuck up on me fast. Still it seems to be perfect as seen in the "chefs sample" 2nd picture....

    cut the flat and pulled the point.....

    Looks really good, hope you enjoy them.  Too bad we don't have Qsmell.

    MAN, THAT LOOKS GOOD! I can't wait for things to slow down so I can do some cooking/smoking!

    Thanks everyone! I am having a ball with this thing!

    You hit that right on the head! Just dont forget to make time for what you love to do no matter how busy you are. I just retired after 20 years with a State agency. I have had two months off but go back to work at the end of this month so I am taking advantage of MY time while it last.

    What type of cooker are you using...22 briskets at once will require quite a smoker.

    Looks great by the way!

    I am hoping to get 4 on a shelf so I can fit 16. We have a couple more smokers for the remainder..
