Well today was the trial run with the custom add on to my rig. There is a thread about it in the SFB smoker build section. Wife wanted some spare ribs for her day so, picked up 2 slabs. Trimmed um down St. Louis style, slathered them in yellow mustard the a good coating of rub and stuck um in the fridge over night. Fired up some lump this mornin about 9, got the smoker up to temp and stuck um in. Held it at about 210 - 215 degrees for 4 hours. They turned out great. Here is a little Qview for ya'll...
