Used Jeff's basic meatloaf recipe with some tweaks

2+ lbs ground chuck
1 small onion chopped
2 poblano peppers chopped
3 cloves of gralic chopped
1 cup bread crumbs
2 eggs
1/4 cup milk
3/4 cup ketchup.

mixed, formed a loaf, and put it in the smoker. Sorry no pics of the smoker in action as it is raining.

I am alos smoking a head of garlic for some smoked garlic mashed potatoes, and I am going to be stuffing some halved avaocados with fresh mozz, & sauteed capicola before putting the halves back together, wrapping with bacon, and then smoking

I love smoked meatloaf!!! That's looks like it will be real nice!

thats a staple,

just cut off the end of the garlic, and drizzle a little olive oil on the exposed cloves, and smoke until done(about 2 hours this time). much like roasted garlic in the oven, except better. jsut suqeeze it out of the head, and it is good to go.

I am using mine to put in some mashed potatoes..
 
thanks, I had leftover capicola, and was already wrapping in bacon, so I wanted to have a different taste inside. The avocados were a dissapointment, looked good, didnt taste good. Ill post the pics in a few.
 
meatloaf was excellent, thanks to jeff and the his recipe as a framework for mine, as well as the recent post by cajunsmoke13 that inspired me to try one sooner rather than later.

the avocado, not good, Ill stick to eating raw avocados, and wrapping meatballs,and peppers for the smoker.

Hey Jim, very nice looking grub you have going on~Everything looks so good.

Liked the garlic part really well..that is always good. Very nice on your part.

Interesting thing stuffing an avocado, though it sure does look nice. I'm with you on the results though....not so great. Avocado is more for fresh with tortillas and as guacamole. As my dad would say, nothing better than a hot "bolillo", black refried beans, and fresh mashed avocado, for a great sandwich!

Thanks for sharing the pics, now I am hungry again right after dinner!

this dinner was for my wife, but i was happywith it in the end.

i am really looking forqard to a pastrami sandwich tomorrow.
