Monks are traditionally frozen Beef  meatballs wrapped in Bacon , dusted with Rub and Sauced .

These are good snacks , try some and do them your way ( change the ingredients if you want ).

Pretty easy really. I buy the frozen meat balls from Sam's,. I find them to be better than most. Thaw them of course, wrap them with apple wood smoked bacon (the thinner cut). 1/2 of a piece will do. Smoked them with hickory at 275. Probably took about 1.5 hours. Them brush them with some slightly thinned sauce and let caramelize for about 15min. I dusted them some 5 pepper rib rub for some pop and let sit another 5 min. Pulled them from the smoker....cool and sever.

LOL...careful using these as an appetizer! As you can't eat just 1 or 2 and you'll get full!! 

Oh, wrap the bacon tight and position on the smoker to where the bacon is on bottom and top. When the fat renders from the bacon there done.
