Mmmmmm Spicy Peaches!!

Yeah that's right! Spicy Peaches!

There's this recipe that's been floating around the web for a long time. Uses Hot Cock ( Sriracha), orange marmalade, other liquids and spices, dip the meat in it, burn it, and eat!

Great on Chicken, pork, fish, and Burgers!!!! Steak too!

So for this recipe I used peach preserves instead marmalade. Sriracha, garlic, ginger, soy, honey, I think that was it for this batch!

  How spicy is it? (on my scale  :icon_twisted: )   I haven't heard of this & I am curious  :icon_mrgreen:   That burger looks perfectly done by the way  :drool

Jeremy, no where near your Scoville Scale! But it's adjustable per everyone's tastes. I myself would've liked it a bit hotter, however my wife who likes hotter than me thought it was perfect. Ugghhhh!! I'll post the recipe in the morning.
 
Yeah right, I can see in the picture when you put the pieces of meat in the sauce the bubbling up like acid rolling to a boil around it!

They sure did cook up pretty ....... just the way I like 'em!

Okay Good Morning all! Here is the original recipe, followed by the actual recipe that I used for this cook.
[h1]Sweet & Spicy Sriracha Hot Wings[/h1]
Prep 20 min ∙ Cook 18 min ∙ Makes 16 ∙ Source Tastykitchen.com
[h3]Ingredients[/h3]
  • 4 pounds Chicken Wing Drummettes
  • 1 Tablespoon Sesame Oil
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper
  • ½ cups Sriracha Thai Hot Sauce
  • ¼ cups Ketchup
  • ½ cups Soy Sauce
  • ¼ cups Honey
  • 1 cup Sweet Orange Marmalade (I Used Smucker's)
  • 4 cloves Garlic, Minced
  • 1 Tablespoon Fresh Ginger, Minced
  • ½ cups Fresh Cilantro, Chopped
  • 2 Limes, Zested And Juiced
  • ¼ cups Rice Wine Vinegar
[h3]Directions[/h3]
Place drummettes in a gallon-size Ziploc bag. In a medium bowl, whisk together all remaining ingredients. Pour over the drummettes in the bag. Press out most of the air and seal the bag. Carefully toss drummettes with the sauce in the bag and place in the refrigerator for several hours or overnight.

Preheat oven to 375ºF. Spray a 9×13-inch baking dish with cooking spray.

Pour chicken and all of the marinade into a baking dish and bake for 45 minutes to 1 hour, stirring halfway through.

Note: This can also be done on the grill or smoker. Keep an eye on it and watch for flare ups.

I halved the recipe, then omitted some of the ingredients that I mysteriously didn't have on hand or didn't want to use. Items omitted ketchup, cilantro, and rice wine vinegar. I substituted peach preserves for the orange marmalade. You can use any jelly you like, grape, pear, strawberry, etc. This sauce would be good with some fresh chiles in it too. I'm thinking Serrano or Thai chiles. I simmered all of my ingredients until the sauce reduced in half, then I chilled it in the freezer for a few minutes to get the temp to drop. dipped one side of the burger in the sauce. Put it on the grill sauce side up. flipped, heavily sauced that side and grilled to perfection! The wife loved the flavors, and I will be making this again. The flavors would be great on ribs, or pork butt.

Works with a lot of meat.

Thanks Willie! Oh man Loco Moco! I had a big Loco Moco at Oceans Apart in Lincoln City Saturday! Man was that tasty! Yeah these would be great in Loco Moco! Oh I know this sauce would be great in a hamburger fatty too!
