So this weekend about 10 lbs of fresh snap beans showed up at the back door. Usually I would have used bacon trim in them but since we had no winter and my MES was FUBAR, I had find something else. You all know I like hocks, I would rather have smoked cured hocks than fresh hot donuts!

Got about 4 or 5 lbs of beans snapped and in the pot with my secret ingredient, ( Mom used a pinch of sugar with all green veggies, me I prefer honey). Threw in about four hocks. The air now is perfumed after an hour. Its going to be a wonderful day!


Will add some more pictures as they happen........ gonna be a good ol'country supper tonight!

Looks so good...never did beans with hocks. Just with bacon, smoked back fat.

Recipe please.
Recipe?  Pot of water, fresh snap beans (snapped), add some seasoning meat (bacon, sausage, ham, andouille, hocks, tasso, pickled pork, fat back, etc etc.), a pinch of sugar or honey, boil till tender like you like 'em. Some times I add some onions, sometimes some new taters like below. Just go however you like. Sometimes I will make creamed new taters or bermuda onions to go with the beans, sometimes I just add 'em to the pot.

This is what country kids grew up on in the south. Maybe not beans everyday but something from the garden with just a little seasoning meat. Oh and you always checked to see how much seasoning meat was in the pot. You better make sure if you grab some, there is still plenty for Pop...LOL
 
 
You know those green beans showed up with some fresh new red taters too! What a happy aromatic pot!


Had creamed onions last week, so gonna leave the onions out tonight. Hocks, new taters & snap beans..... what more could ya ask for?

Good stuff! The Amish and other Dutchy Folk here in PA make the version with Taters. Been awhile since l made any. You got me putting Hocks and Green Beans on the grocery list...JJ

This would be called soul food but I am white.... LOL

Now listen, don't jump in there and drive up the prices. Tell the butcher you are using 'em for crab bait! I can't even afford ox tail or flank anymore! LOL

I get 25/30 lbs/year when smoking. I keep about 1/3 fresh frozen, I smoke a 1/3 and Thanks to Pop's and those around here, I cure/smoke the rest.

You don't have to rub 'em and turn 'em.... jsut throw 'em in a bucket with water and cure! I love it!

BTW if you don't use SS, put a cap pf lemob juice in with the water and it will not only shine up your pot but help hold the bright green on the beans to make 'em more sexy on the plate.
 
That is a tasty pot of green beans Kevin and I am still waiting on my okra to produce (just planted it).     What I would give for a plate of fried okra right now.
 
Oh wow oh wow!!! Man that is a meal fit for a King!! Even though I am in the North, my Mother was from Georgia and I grew up eating that delicious food, still do!!
