Smoking a 16 lb costco prime brisket tonight. Trimmed it up a bit (1 lb 12 oz) and threw a little kosher salt/pepper on it. Few pics below and I'll be back later with some more pics.

Smoking on my 22.5" WSM sittin at 235 right now. Its a pretty windy night so Im expecting some temp swings but Ive got my "wind break" of a cardboard box. I dont get too concerned with the temps on briskets after doing a few of these. It seems to me that if you pull them when theyre tender (I poke with a toothpick 185-210 IT), rest them and then slice it comes out tender and juicy. Any questions feel free to ask.






 






Care package now complete with some smoked cheese on top! Smoked with hickory for ~15 hrs on my WSM. Thanks for lookin.

10.5 hr pic update. Smoker stayed steady over night it seems (my alarms didnt go off on my Maverick). Woke up a few times and it was running 240-250 so I was happy with that. Added a bit more charcoal so it can finish out. IT is at 180* after 10.5 hrs and the smoker is comin back up to temp. SUPER windy this morning so I only have 1 vent open now. Really need a better wind break soon.

Looks great. Half way there. I have seen a welding blanket and some spring clips works very well. I think they are pretty cheap too. Probably less than that big ol Brisket cost. Hahaha....

Thanks Timber. I bought one of those awhile back but then decided I didnt want to deal with the fiberglass and returned it haha.

Thankfully I didnt have to pay for this beast as Im smoking it for a friend thats taking it to a small family gathering. Doesnt mean I dont get to taste test when I slice it though..

My IT dropped to 178* for an hour or so after breaking the WSM apart but were back up to 180* now. Smoker temp 255*
