I have in the past made beef sticks in my smoker.  For the most part turn out really good but the  problem I am having is that the side that has the chip holder and heater on it always gets done faster and tends to dry out that side of the beef sticks.  Is there away to get the heat to be more uniform to get even heat times with the sticks. What I have done in the past is flip flop them half way through. Any ideas.

Thanks

allen

I use a 12x 12 or 9 x 9 ceramic tile on top of the chip tray to baffle the heat. shove it against the right and rear wall and then pull out about 1/2 " .

That seems like that would work great I'll give that a try
