MES foil/towel/cooler vs. just drop the temp to 100

    Casual observation/question from a MES novice here. I searched the archives and found enough to make me curious.

    Could you rest meat at the end of a smoke simply by dropping the temp in the smoker to 100-150*, and forget the whole wrapping thing altogether? I can't imagine you'd lose that much moisture. Sounds simpler than the often-mentioned foil + towel + cooler routine. And preserves the bark/glaze.
     
  2. That works just fine. It is what restaurants do. It is like a proof-er oven. I also like to keep the bark that I worked so hard for. But don't forget that the rest is very much needed.

    Between my MES30, AMNPS, a stand-by rub, and this trick, my smoking life has gotten really simple.
