MES 40 Temps for smoking Butt

For those of you with the MES 40, what temp do you set it to smoke your Butts?

Also, does water in the water pan affect the length of the smoke? How about if you are smoking 2, 3 or 4 Butts at a time? Should the temperature be set higher?

I would like to be able to put my Butts on about 6 AM and have them ready in 11 to 12 Hours if possible. 
 
I smoke my butts at 225-230...I fill the water pan with boiled water  when preheating the MES. It acts as a heat sink in your smoker and really helps with recovery time when opening the door. It also adds moisture to your smoke. I never raise the temp for more butts....low and slow.

Also top vent wide open when smoking...trust me on this...
