I noticed my smoked sausage was cooking, not smoking. I set the temp on the MES at 165*. I set 2 probes in the smoker. 1 on the left, 1 on the right on the middle rack. The smoker was already at smoking temp because I just pulled the kielbasa. The MES was saying 165* and the 2 thermometers were fluctuating between 188* and 195*. Has anyone else had this problem?

Yes.... Now you can set the temp on the MES at 135 and see what the real temp is.... then you can adjust in the future.... Not a big problem.... just something you have to remember....

It is better to operate the smoker using an external calibrated thermometer anyway...

A 30°F overshoot is high but not totally unusual, as the MES cycles. Daves suggestion will help. Trust the Therm at the racks and adjust from there as needed...JJ
