I hate to belabor the subject but I think I have found something interesting about temps. in the MES Gen. 2 I am cooking right now .Country ribs .
Outside temp. is 40 degrees . Maverick 732 probe is hanging off rack set in the second slot from the bottom about midway from front to rear next to (looking from the front)the left side wall. In the past I have put Maverick probe in rear of MES where Mes temperature probe is on back wall . When I did that Maverick always read about 30-50 degrees above MES . Right now where Maverick probe is I am getting readings within 5-8 degrees of MES . basically temps are dead on . Go figure . Somehow their probe compensates for temps in middle of cooker.
