Hello all new here. I was wondering i was haveing problems with my mes and my maverick reading the same temp. I did the boiling test and the maverick was right on. I set the smoker to 250 and the maverick was reading 210. I had a metal pan in there to catch dripings and once i removed the pan they were within 5 degrees. Anybody else ever had this problem or might know why it did that. I had it on the 5th rack towards the bottom if that helps. Thanks

Need more Info, but if your metal pan was nearly as big as the size of the rack, it will block the heat from rising above it.

That could let the temp under the pan get to 250°, satisfying your MES control, but the heat wouldn't get through to your Maverick probe above

the pan.

That happened to me one time long ago, when I had two 9 X 12 foil pans full of Chicken Thighs, on the same rack. Heat was trapped below those pans. Once I moved one pan to another rack, everything leveled out.
